Many Filipinos love the taste of cream dory fish – but what about dory fish with chunky tomatoes and basil? you’ll simply be amazed at the taste of this amazing dish – and it’s all ready for the table in about 35 to 45 minutes… Enjoy!

Ingredients:
- 1 tbsp olive oil
- 3 portions fish filet (cream dory)
- 2 large ripe tomatoes – diced (also works well if you have about 6 small tomatoes)
- 20 leaves fresh basil
- 1/2 cup white wine
- 3 pcs kalamansi
- 4 cloves of garlic – minced
- salt and pepper to taste
Directions:
- Season fish with salt and pepper
- Coat a large pan with oil – Arrange fish flat on the pan – turn over once to coat both sides with oil
- Add wine – (Use a good white wine – something that you wouldn’t mind drinking)
- Sprinkle garlic over the entire pan
- Arrange tomatoes on top of each fillet – distribute portions equally
- Place pan on burner and bring liquids to a boil over medium-high heat – Once broth boils, turn heat to medium and cover pan with a sealed lid
- Cook fish for approximately 10 minutes or until it looks fluffy and the color is an opaque white
- Using a spatula – plate fish without dislodging the tomatoes on top – Spoon sauce onto plate and over fish without disturbing the tomatoes
- Garnish generously with basil leaves and kalamansi over fish – Serve and Enjoy
