This popular Thai style appetizer is a perfect Filipino recipe for a party snack – either way you will be the hit of the night. This recipe makes about three dozen snack-size shrimp cakes and takes about 15 minutes to prepare and another 10 minutes to cook.
Sweet Chili-Lime Aioli:
1/4 cup Thai sweet chili sauce
1/4 cup mayonnaise
zest from 1 lime
Basil Shrimp Cakes Ingredients:
2 cups peeled and de-veined shrimp
3 slices white bread (torn into pieces)
1/2 cup chopped onions
2 tablespoons chopped basil
2 tablespoons cubed yellow bell peppers
2 eggs
1 teaspoon fish sauce
2 tablespoons all-purpose flour
1 teaspoon chopped garlic
You Will Also Need:
1 cup of breadcrumbs
1/2 cup all-purpose flour
1 beaten egg
oil for frying
Preparation:
1- Make the chili-lime aioli – in a bowl, mix together Thai sweet chili sauce, mayo and lime zest – set aside in the chiller until ready to use.
2- Make the shrimp cakes – coarsely chop 2 cups shrimp and transfer to large bowl – add remaining ingredients and mix thoroughly until well incorporated – set aside in chiller for 30 minutes
3- In the mean time, set out breadcrumbs, flour and beaten egg in separate bowls – shape shrimp mixture into patties using an ice cream scoop to measure evenly – when formed dip each patty in flour (brushing off excess) egg and coat in breadcrumbs – repeat until done
4-Heat oil pan and deep-fry patties until golden brown – serve with sauce on side – Enjoy!
