Filipino pork humba recipe – delicious braised belly-pork with sugar

Filipino Humba with eggs and potatoes – An all time Favorite in the Philippines

Filipino Humba is an all time favorite in the Philippines. Several variations of this dish are known depending on the location you are familiar with or live in the Philippines. In Luzon and the northern regions Humba is cooked in a different fashion – this variation is one you often see in the southern regions of the Visayas and Mindanao.

This variation also has potatoes and hard-boiled eggs included, a slight variation for your liking. Enjoy!!

Ingredients:

  • ½ kilo. Pork – cut or chopped into desired pieces
  • 1 cup water
  • 3 cloves garlic – crushed
  • 1/3 cup vinegar
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 bay leaf
  • 1/4 tsp. pepper
  • 1 tsp. oil
  • salt to taste
  • 3 potatoes – peeled (this is optional)
  • 2 hard-boiled eggs (this is optional)

Procedures:

  • Combine ingredients in large pot – bring to boil
  • Once boiling – lower heat and simmer for approximately one hour (or until pork is tender)
  • If adding the potatoes wait until the last 20 minutes of cooking time
  • add the boiled eggs at the last 10 minutes or so
  • salt to desired taste if wanting and serve hot
