This creamy Rich Mushroom Chowder will be a big hit with Filipino families, and is easy to make with local ingredients. Feel free to experiment with this recipe:
INGREDIENTS:
1 tablespoon of flour
2 tablespoons of water
1 cup light cream
1/4 cup parmesan cheese
1/2 cup butter
1/4 teaspoon black pepper
2 teaspoon of salt
3 cups chicken stock
1 cup diced carrots
1 cup chopped celery
16 oz sliced mushrooms
1/2 cup chopped onions
1 cup diced potatoes
PROCEDURE:
In large saucepan – melt butter
Add onions and saute until golden brown
Add mushrooms, vegetables, salt and pepper and cover pan and let simmer for 15 to 2- minutes – or until vegetables are tender to your liking
Combine flour and water and slowly stir into vegetables
Add chicken stock – simmer 10 minutes.
Just before serving – stir in cream — “important” do not let the cream boil
Serve with Sprinkled Parmesan Cheese and Enjoy!
